Fay'S Coq Au Vin
- 8 pieces Chicken
- 1/3 cup Olive Oil
- 1 piece Sweet Onion - Large
- 20 pieces Carrots - baby
- 2 cloves Garlic
- 3 tablespoons Flour
- 3 cups Red Wine
- 2 pieces Bay Leaf
- 3 tablespoons Parsley
- 1/2 teaspoon Savory
- 1/2 teaspoon Type
- 12 ounces Mushrooms
- 1 cup Rice
- 1 Salt and Pepper to taste
- Brown chicken in oil oil in frying pan. Remove
- Add onions, carrots, garlic and brown, followed by mushrooms to brown.
- Add flour and mix in. Then add wine and seasonings. Mix and bring to boil.
- Add chicken and cover with sauce.
- Either simmer in pan for approximately 1 hour, or transfer to oven at 350 F.
- While chicken is cooking prepare rice.
