Cranberry Orange Scones
- 2 cups flour
- 1/3 cup sugar
- 2 tablespoons grated orange peel (about 1 grated orange)
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, chilled
- 1/2 cup dried cranberries
- 1/4 cup plain yogurt or sour cream
- 3 tablespoons orange juice
- 1 large egg
- 1. Preheat oven to 425 degrees F
- 2. In a large bowl, mix flour, sugar, peel, baking powder, salt. Cut in butter and add cranberries. Mixture should resemble a course meal.
- 3. In a seperate large bowl, whisk yogurt, orange juice, and egg.
- 4. Gradually add flour mixture to the liquids and knead until smooth.
- 5. Pat dough into a 8-inch round and cut into 8 equal wedges. Transfer to a nostick baking sheet, spacing apart the dough.
- 6. Bake until golden brown, about 12 minutes.
