Red Beans And Rice
- 1lb. Dried red kidney beans
- 4 quarts water
- 1/2 cup butter
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 3/4 cup chopped green pepper
- 2 tsp minced garlic
- 2 bay leaves
- 2 tsp salt
- 2 tsp paprika
- 1 tsp thyme
- 1/2 tsp ground red pepper
- 1/2 tsp oregano
- 1 lb andoullie sausage or kilbasa cut in to1 inch pieces
- 1/2 cup chopped fresh parsley
- Sort and rise beans; place in a 6 quart pot. Cover with water 2 inches above beans; let soak overnight. Drain beans. Add 4 quarts of water; bring to a boil. Reduce heat to medium; cook uncovered 1 1/2 hours stiring occasionally.
- Melt butter in large skillet. Add garlic, onion, celery and green pepper; saute till tender. Add sauted vegetables and next 6 ingredients to beans; cook uncovered 1 more hour, stiring occasionally .
- Bake sausage @ 350 for 20 minutes and add to beans. Stir occasionally till beans are tender and sauce is thickened. Remove bay leave and stir in parsley. Serve over oven rice or plain cooked rice.
