Almond And Olive Crusted Salmon

  1. 1. Preheat oven to 400 degrees.
  2. 2. Heat the olive oil in a small saute pan and saute the almonds until lightly toasted and just fragrant.
  3. 3. Remove pan from heat and stir in bread crumbs, thyme, lemon rind and olives.
  4. 4. Prepare a baking sheet or pan with oil, parchment paper or foil to prevent sticking; place salmon in the pan.
  5. 5. Lightly press 1/4 of the crumb mixture on the top surface of each salmon fillet.
  6. 6. Bake the salmon for 12 - 15 minutes, until just opaque in the center.
