Dal Soup
- 8 c. water
- 1 1/2 T. ground turmeric
- 1 T. ground coriander
- 3 bay leaves
- 2 garlic cloves, minced
- 1/2 tsp. cayenne pepper**??
- 1 # chana dal or red lentils
- 1/4 c. olive oil
- 1 lg onion, chopped
- 1 tsp minced fresh ginger
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 2 T. fresh lemon juice
- Minced fresh cilantro
- Lemon wedges
- Bring first 6 ingredients to boil in heavy large pot. Add lentils, reduce heat, and simmer til tender stirring occasionally, about 45 minutes.
- Heat oil in a heavy large skillet over medium heat. Add onion, ginger, cumin and mustard seeds and cook until onion begins to brown, stirring often, about 10 minutes. Mix in the lemon juice.. Stir onion mixture in to the dal. Simmer until reduced to the desired consistency. Serve sith cilantro and lemon wedges as garnish.
