Roast Salmon W/Mustard Crust
- 1/4 cup whole grain mustard
- 1 T. extra virgin olive oil
- 1 1/2 T. minced chives
- 4 8-oz. salmon filets
- Salt and Pepper
- Preheat oven to 400u0b0 and line rimmed baking sheet with foil.
- In a small bowl, stir together EVOO, mustard and chives. Season salmon with S&P and place them skin side down on the baking sheet. Spread the mustard mix over the tops of the filets.
- Roast the fish for 6 min.
- Prepare the broiler. Broil salmon six inches from the heat for about 4 min, until the mustard crust is browned and the salmon is almost cooked through. Using a spatula carefully slide the filets off their skins and transfer to plates (or leave the skin on, if you desire). Serve immediately.
- Suggestion: Serve with Brussels Sprouts sauteed with diced chorizo.
