Heavenly Cloud Cake With Summer Fruits
- CAKE INGREDIENTS:
- 1 cup organic cake flour
- 1 1/2 cups white sugar
- 12 egg whites
- 1 3/4 teaspoons Madagascar vanilla or orange extract
- 1 1/2 teaspoons cream of tartar
- 1/2 teaspoon salt
- SAUCE INGREDIENTS:
- 2 c mixed frozen organic berries
- 2 T maple syrup
- 1 T Demerara sugar
- 3 T cognac, bourbon or brandy
- 1/2 T cardamom
- Fresh mint/and or edible viola flowers for garnish.
- Remove eggs from refrigerator so that they will be at room temperature before whipping.
- Preheat the oven to 375 degrees F.
- Start with a very clean & dry 10 inch tube pan.
- Sift together 1/2 the sugar with flour twice and set aside.
- In a large bowl, whip the egg whites with the vanilla, cream of tartar and salt, to medium stiff peaks.
- Gradually add the remaining sugar while continuing to whip to stiff peaks.
- Fold in the sifted ingredients gently, one third at a time. Do not overmix.
- Gently spoon the batter into the tube pan.
- Bake for 35 - 40 minutes, until the cake springs back when touched, or test with a fork or wooden skewer so that the tool comes out dry.
- Let pan cool completely before removing cake from pan.
- When cool, run a knife around the edge of the pan and invert onto a plate.
- While cake is cooling, add berries and sauce ingredients in a saucepan and stir well.
- Cook over medium high heat until the sauce bubbles, then turn to simmer for about 10 minutes, or until berries become soft and sauce thickens. Stir occasionally while cooking. Set aside to cool.
- Slice cake, spoon berry sauce over slice, and garnish. ENJOY!
