Frosted Carrot & Orange Muffins

  1. 1.treheat oven to moderately hot. Grease 12-hole muffin pan.
  2. 2.tift flours and sugar into large bowl; stir in combined carrot, eggs, butter, milk, rind and juice. Spoon mixture into prepared pan. Bake in moderately hot oven about 25 minutes.
  3. 3.tpread cold muffins with frosting, top with glace orange rind, if desired.
  4. 4.trosting Beat cheese, icing sugar and rind in a small bowl with electric mixer until smooth.
  5. Makes 12
