Frosted Carrot & Orange Muffins
- 2 cups self - raising flour
- 1/2 cup whole-meal plain flour
- 1/2 cup caster sugar
- 1 1/2 cups finely grated, firmly packed carrot
- 2 eggs
- 125g butter, melted
- 1/2 cup milk
- 1 tsp finely grated orange rind
- 1/2 cup orange juice
- Frosting
- 250g cream cheese
- 1/4 cup icing sugar mixture
- 2 tsp finely grated orange rind
- 1.treheat oven to moderately hot. Grease 12-hole muffin pan.
- 2.tift flours and sugar into large bowl; stir in combined carrot, eggs, butter, milk, rind and juice. Spoon mixture into prepared pan. Bake in moderately hot oven about 25 minutes.
- 3.tpread cold muffins with frosting, top with glace orange rind, if desired.
- 4.trosting Beat cheese, icing sugar and rind in a small bowl with electric mixer until smooth.
