Southern Brunswick Stew

  1. Preparation: In a large pot/Dutch oven, sautee diced bacon until fat is rendered. Add flour to make a roux. Add onions and red pepper, cook until tender. Add chickens stock, tomatos,potatos, vegetables, hot sauce, salt, pepper, thyme, and bring to simmer.
  2. Let simmer on medium/low heat for three hours, or until stew thickens. Add pulled pork (barbeque) reduce heat, and cook another 30 minutes.
