2010 Thanksgiving Dressing
- 3 very large sweet onions, diced
- 1 1/2 bunches celery, diced
- 2 loaves bread, crusts removed
- whole milk
- 4 eggs
- Pepper (no salt or thyme if bird is brined)
- Turkey livers, 3, cleaned
- 1 stick unsalted butter
- Olive oil
- 4 turkey wings
- In large skillet with lid, melt butter with oilive oil, add celery and onion, pepper, cover over low heat for 2 hours, add liver and cook another 45 min.-1hr. Meanwhile, tear bread into pieces, add slightly cooled, cooked onion,celery, liver mix, add 4 eggs and enough milk to be very moist. Stuff bird.
- For preparing stuffing outside of the bird, butter an 8x8" casserole. Saute the wings in olive oil very heavily on one side(poke the wings first). After stuffing the bird, take the rest of the stuffing, add a little salt and pepper(the stuffing in the bird gets extra salt from the brine), add to dish,place heavily browned side of wings down on stuffing, cover with foil and cook about 1 hour in a 350 degree oven.
