Chocolate Chip Cookie Custard Peach Pie

  1. -Slice peaches. Carefully toss with lemon juice in a medium bowl, set aside.
  2. -Combine cream, milk, salt, and sugar in a 3 quart heavy saucepan and simmer on medium heat. Remove from heat.
  3. -Whisk eggs, yolks, and vanilla in a medium bowl, then add crea, mixture, whisking constantly.
  4. -Pour custard through fine-mesh sieve into 2 bowls. Add half of pre-broken cookies to each bowl.
  5. -Place peaches on bottom of pre-prepared pie pans with the crust already situated in. Make sure peaches are covering the entire bottom surface in each pan.
  6. -Sprinkle brown sugar and cinnamon evenly onto peaches in each pan.
  7. -Pour each cookie-custard mix onto peaches in each pan.
  8. -Bake in 350 degree oven for 40-50 mins, or until pie slightly bounces back to the touch. Another way to tell if the pie is done is if the pie crust is golden-brown.
