Chocolate Chip Cookie Custard Peach Pie
- -4 large, ripe peaches
- -2 tsp. lemon juice
- -1 1/2 cups cream
- -1 1/2 cups milk
- -1/8 tsp. salt
- -1/2 cup sugar
- -3 eggs
- -3 egg yolks
- -3/4 tsp vanilla extract
- -25 chewy chocolate chip cookies (a radius of about two inches), broken into fifths
- -2 pie crust bottoms
- -2 tsp. light brown sugar
- -2 pinches cinnamon
- -Slice peaches. Carefully toss with lemon juice in a medium bowl, set aside.
- -Combine cream, milk, salt, and sugar in a 3 quart heavy saucepan and simmer on medium heat. Remove from heat.
- -Whisk eggs, yolks, and vanilla in a medium bowl, then add crea, mixture, whisking constantly.
- -Pour custard through fine-mesh sieve into 2 bowls. Add half of pre-broken cookies to each bowl.
- -Place peaches on bottom of pre-prepared pie pans with the crust already situated in. Make sure peaches are covering the entire bottom surface in each pan.
- -Sprinkle brown sugar and cinnamon evenly onto peaches in each pan.
- -Pour each cookie-custard mix onto peaches in each pan.
- -Bake in 350 degree oven for 40-50 mins, or until pie slightly bounces back to the touch. Another way to tell if the pie is done is if the pie crust is golden-brown.
