Never Fail Prime Rib Roast

  1. Preheat oven to 500 F
  2. With a small sharp knife cut little slits into the roast and put garlic slivers into the slits.
  3. Mix the dry mustard, butter, thyme and fresh ground black pepper together.
  4. Rub this mixture onto the meat and make sure to spread well all over.
  5. Put meat in a shallow pan on a rack and put it in the preheated 500F oven and bake for 10 minutes.
  6. Turn heat down to 350 F and bake for 20 minutes a pound.
  7. Take meat out when meat thermometer reaches between 135 and 140, sprinkle with a little salt and cover with tin foil for 15 minutes.
  8. Carve and enjoy!
