General Zo'S Chicken
- 4 lb boneless, skinless chicken breasts, cubed
- 1 green pepper
- 1 red pepper
- 1 onion
- 1/2 c chopped green onions
- about 2 c oil for frying
- Marinade
- 4 tbsp sherry
- 1 tsp salt
- 1 egg
- 4 tbsp corn starch
- Sauce
- 2 tbsp red pepper sauce
- 1/4 c sugar
- 4 tbsp vinegar (white rice)
- 2 tsp sesame oil
- 4 tsp corn starch
- 1/4 c water
- 4 tbsp soy sauce
- 2 tsp chopped ginger
- Mix marinade ingredients in a bowl and mainate chicken for 1/2 to 1 hour.
- Mix sauce ingredients and set aside. Cut peppers and onion.
- Fry marinated chicken chunks in hot oil until golden brown. Drain chicken and set aside.
- Add sauce to pan and stir fry until mixture thickens. Add chicken and veggies and stir fry until heated through -- about 1 minute.
