Chicken Empanadas
- 8 oz. chicken in 1/2" slices
- 1/2 small onion chopped
- 1/2 green pepper chopped
- 1/2 tomato, coarse chopped
- 4 green olives
- 2 Tbsp apricots or raisins
- 2 Tbsp broth
- 1 Tbsp tomato paste
- 1 Tbsp chopped parsley or cilantro
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/2 tsp pepper
- cooking spray
- Wonton wrappers
- Salt to taste
- Cook 1st 13 ingredients in a large skillet about 5 minutes (until chicken is done)
- Process in food processor coarsely.
- Chill for 30 minutes
- Place 2 Tbsp on wrapper, seal with water
- Bake 400 deg for 12 minutes
- Coat cookie sheet with cooking spray
- light coat empanadas
