Gnocchi Surprise
- 1 pkg. frozen gnocchi
- 1/2 stick margarine
- 2 pt. heavy cream
- 1 slice honey-baked ham (1/4 inch thick)
- 1 medium size can peas
- 1 small can sliced mushrooms
- 1/2 c. Parmesan cheese
- 1/2 tsp. basil spice
- 2 pkg. frozen butternut squash
- 2 c. applesauce
- 1/2 c. brown sugar
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- 1/2 c. heavy cream
- 2 eggs, beaten
- 4 Tbsp. butter, melted
- 1/2 c. bread crumbs
- 1/2 c. sliced almonds
- 2 Tbsp. butter, melted
- 4 medium zucchini, sliced lengthwise 1/8 inch thick
- 6 to 8 eggs
- 6 to 8 Tbsp. bread crumbs
- 3 Tbsp. grated Romano cheese
- 1 Tbsp. parsley, finely chopped
- 1/2 tsp. chopped garlic
- 1 tsp. salt
- Mix all ingredients (except zucchini) well with a fork.
- Wash zucchini, slice them while wet and flour them.
- Put 1 or 2 zucchini slices in egg mixture at a time.
- Cover them completely with egg mixture.
