Melva Pudding
- PUDDING
- 1 C sugar
- 1 egg
- 1 tbsp apricot jam
- 1 C flour
- 1 tsp baking soda
- 1/4 tsp of salt
- 1 tbsp melted butter
- 1 tsp white vinegar
- 1 C milk
- SAUCE
- 1/2 C of cream
- 3 oz butter
- 1/2 C brown sugar
- 1/4 C water
- PUDDING
- Beat sugar and egg. Add the jam, then the flour, baking soda and salt. Mix well.
- Add butter, vinegar and milk. Mix well.
- Bake at 350 covered in a glass dish sprayed with PAM for 50 minutes.
- SAUCE
- While pudding is baking, make sauce.
- Bring all ingredients to a boil. Boil for 5 minutes and then pour over cooked pudding immediately when removed from the oven.
- Serve hot/ can reheat uncovered for 15 minutes.
- Freezes well.
