Maine Whoopie Pies
- 1 CAKE
- 2 cups Flour
- 1/2 cups Cocoa Powder
- 1 1/2 teaspoons Baking Soda
- 1/2 cup Shortening or butter
- 1 cup Sugar granulated
- 1 cup Buttermilk 1 cup milk + 1 tablespoon lemon juice or vinegar
- 1 Egg large
- 1 teaspoon Vanilla Extract
- 1 FILLING
- 1 cup Shortening or butter softened
- 2 cups Powdered Sugar
- 2 cups Marshmallow Fluff or creme
- 2 teaspoons Vanilla Extract
- CAKES
- 1. Sift together the flour, cocoa powder, baking soda, and salt. Set aside.
- 2. In a mixing bowl fitted with a paddle, cream together the shortening and sugar.
- 3. Add the egg and vanilla and mix until combined.
- 4. Continue to mix on low speed while alternately adding the buttermilk and flour mixture. Stop to scrape the sides of the bowl with a rubber spatula as needed.
- 5. Spoon about 1/4-cup of batter roughly 3 inches apart onto the prepared baking sheets (an ice cream scoop works well here).
- 6. Bake for 12-15 minutes or until the tops are puffed and a toothpick inserted into the center of one of the cakes comes out clean. Transfer to a wire rack to cool completely.
- FILLING
- 1. Add all the ingredients to a large bowl and using the mixer paddle, beat until smooth.
- 2. Spread about 2 tablespoons of filling on the bottom side of one cake and top with another cake
- 3. Wrap individually in cling film until you're ready to eat one.
