Hash Brown Potato Latkes
- 1 pound has browns, defrosted if frozen
- 1 medium onion, finely diced
- 2 large eggs
- 1/3 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 5 tablespoons canola oil or as needed
- Mix all ingredients except the oil in a large bowl until thoroughly combined. Heat oil in a large skillet until hot. Working in batches, drop large spoonfuls of potato mixture into the oil; fry turning once, until golden brown on both side. Serve warm with apple sauce or sour cream.
- Variations:
- Use southwest-style hash browns. Serve with salsa.
- Add 8 ounces of shredded mozzarella. Serve with marinara sauce.
- Omit the onion and salt. Add 5 green onions, chopped; 3 ounces smoked salmon, chopped; 5 ounces goat cheese, crumbled. Top with sour cream flavored with chopped dill and chives.
- Add 1 1/4 ounce packet taco seasoning and 8 ounces shredded or diced cheddar cheese. Serve with salsa.
- Omit the onion. add 1 cup chopped chives and 1/4 cup finely chopped dill. top with sour cream.
