Hash Brown Potato Latkes

  1. Mix all ingredients except the oil in a large bowl until thoroughly combined. Heat oil in a large skillet until hot. Working in batches, drop large spoonfuls of potato mixture into the oil; fry turning once, until golden brown on both side. Serve warm with apple sauce or sour cream.
  2. Variations:
  3. Use southwest-style hash browns. Serve with salsa.
  4. Add 8 ounces of shredded mozzarella. Serve with marinara sauce.
  5. Omit the onion and salt. Add 5 green onions, chopped; 3 ounces smoked salmon, chopped; 5 ounces goat cheese, crumbled. Top with sour cream flavored with chopped dill and chives.
  6. Add 1 1/4 ounce packet taco seasoning and 8 ounces shredded or diced cheddar cheese. Serve with salsa.
  7. Omit the onion. add 1 cup chopped chives and 1/4 cup finely chopped dill. top with sour cream.
