Green Chile And Chicken Soup
- 3 chicken breats - Season with garlic, lime, chile powder, salt and pepper and brown in olive oil then dice
- 2 potatoes diced
- 2 zucchini diced
- 1 white onion diced
- 5 cloves garlic minced
- 1 red bell pepper
- 2 carrots diced
- 6-7 charred green chiles peeled and diced (if you don't want it to be too spicy, remove seeds.)
- 1 jalepeno diced
- 1 tsp cumin
- 1 tsp chile powder
- 1 tbs lime juice
- salt and pepper
- 4 cups chicken stock
- Garnish:
- avocado
- cilantro
- queso fresco
- lime juice
- In a large pot heat 2 tbs olive oil. Saute the potatoes for 5 minutes then add the rest of the veggies and the spices. When they are soft add garlic, diced chicken, lime juice and 4 cups of chicken stock. Cover and let simmer for 30 minutes. Adjust salt and pepper as needed. Serve with queso fresco, chopped cilantro, diced avocado and lime.
