Matt'S Favorite Chopped Salad
- 1 head iceberg lettuce chopped
- 1 head romaine lettuce chopped
- 3 - 4 fresh basil leaves
- 1 large tomato seeded & chopped
- 1 small can finely diced black olives
- 1 medium mild onion finely diced
- 1 large avocado cubed
- 6 oz. (approx) cubed sharp cheddar
- 6 slices bacon cooked & crumbled
- salt & pepper to taste
- garlic powder to taste
- Approx. 4 T. virgin olive oil & red wine vinegar
- Saute' 6 slices of thick bacon in a large pan. Meanwhile, clean and chop lettuce into 1/2 inch bites (approximately) and place in extra large bowl. Toss romaine & iceberg together until evenly mixed. Drain olives and add to lettuce. Toss until evenly mixed into the lettuce. Add chopped tomato and 1/2 of the diced onion. Toss ingredients again until evenly distributed. When bacon has finished cooking, allow to cool slightly on paper towel and then chop or crumble the bacon. Add other half of diced onions into the bacon fat and sautee until dark golden brown. Drain on paper towel. Just before you're ready to serve, shake olive oil and vinegar onto the salad to taste. Add garlic powder, salt & pepper to taste. Add avocado, bacon and cheese and toss one last time. Sprinkle sauteed onions on top as garnish.
