Brown Rice Pilaf
- 1T unsalted butter
- 1 shallot chopped
- 1 cup long grain brown rice, rinsed
- Salt and ground black pepper to taste
- 2 cups low sodium chicken broth
- 1 clove garlic smashed
- 2 sprigs fresh thyme
- 3T fresh flat leaf parsley chopped
- 3 scallions, thinly sliced
- Melt butter in a large pan over medium heat. Add the shallot and cook for 1-2 minutes until tender. Add the rice and stir well coating with the butter and shallot mixture. Cook for a few minutes until the rice is glossy. add salt and pepper.
- Stir in the chicken broth, garlic, and thyme. Cover with a tight fitting lid and cook for 40 minutes. Remove from the heat and let sit for 10 minutes. REmove the thyme sprigs and garlic clove. Fluff the rice with spoon or fork and stir in the parsley and scallions.
