Chicken W/ Mozzarella And Sautéed Apples
- 4 pieces Boneless, skinless chicken tenderloins
- 1 teaspoon Extra virgin olive oil
- 1 teaspoon Italian seasoning
- 1 pinch Salt
- 1 pinch Ground black pepper
- 1 cup Whole wheat rotini pasta
- 1 Honey crisp apple, cut into thin slices
- 1/4 cup Shredded mozzarella cheese
- Bring 2 cups water to a boil in small pot
- Heat olive oil in large frying pan over medium heat
- Cut chicken tenderloins into 1 inch cubes
- Add whole wheat pasta to boiling water, lower to a simmer, let cook for 10-12 minutes
- Add chicken cubes to frying pan, stir occasionally
- Add salt, pepper and Italian seasoning to chicken, stir to combine
- Once chicken is almost cooked through, add apple slices and let cook for 3-4 minutes
- Drain pasta, put 1/2 on each plate
- Sprinkle 1/2 mozzarella on each plate of pasta
- Top with chicken and apple slices
- Enjoy immediately!
