Blueberry Muffins
- Muffins:
- 2 eggs
- 1/2 tsp salt
- 1/2 cup sugar
- 1/2 tsp baking soda
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup vegetable oil
- 1/2 cup sour cream
- 1 tsp vanilla
- 1 1/2 cups blueberries
- 2 cups flour
- Topping:
- 1/2 cup sugar
- 1/4 cup butter, cubed
- 1/3 cup flour
- 1 1/2 tsp cinnamon
- Muffins:
- Preheat oven to 400.
- Mix together flour, salt, baking soda, and cinnamon.
- Beat together eggs and sugars. Mix in oil, vanilla, and sour cream. Mix dry ingredients into wet mixture. Gently fold in blueberries.
- Topping:
- Mix together all ingredients and sprinkle over batter before baking.
- Bake 20 minutes.
