Au Gratin Potatoes Casserole
- 4 lb. potatoes (12 medium)
- 1 small onion, chopped
- 1 pkg. onion soup mix
- 1/2 c. margarine
- 2 Tbsp. flour
- 2 tsp. salt
- 1/2 tsp. pepper
- 4 c. milk
- 4 c. shredded Cheddar cheese
- 1/2 c. crushed seasoned croutons
- paprika
- Tabasco sauce
- kielbasa sausage
- Cut potatoes into thin slices (leaving peels on) to equal about 8 cups.
- Cook and stir onion and onion soup mix in margarine until tender.
- Stir in flour, salt and pepper.
- Cook over low heat, stirring constantly, until mixture is bubbly. Remove from heat.
- Stir in milk and 3 cups cheese and a dash of Tabasco sauce. Heat to boiling, stirring constantly.
- Boil and stir 1 minute. Place potatoes in ungreased large baking dish.
- Slice up kielbasa and put in dish.
- Pour cheese sauce over potatoes and kielbasa. Bake, uncovered, at 375u0b0 for 1 hour.
- Mix remaining cheese and crushed croutons and sprinkle over potatoes.
- Sprinkle with paprika.
- Bake, uncovered, until top is brown and bubbly, 15 to 20 minutes longer.
- Serves 10.
