Grilled Tuna With Colored Peppers
- 2 teaspoons grated lemon peel
- 1 teaspoon sea salt
- 1/2 teaspoon ground fennel
- 1/2 teaspoon white pepper
- 1/2 teaspoon black pepper
- 4 (4 oz.) tuna fillets
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 green bell pepper
- 2 tablespoons purchased roasted garlic oil
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh chives
- 1. In small bowl, stir together lemon peel, salt, fennel, white pepper and black pepper. Rub mixture over tuna fillets. Cover; refrigerate 15 to 30 minutes.
- 2. Meanwhile, cut bell peppers into 1-inch wedges.
- 3. Heat grill. Brush tuna lightly with garlic oil; toss bell peppers with remaining oil. Place tuna and bell peppers on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill.
- 4. Cook bell peppers 2 to 4 minutes or until lightly charred. Cook tuna 6 to 10 minutes or until fish just begins to flake, turning once. Place bell peppers and tuna on serving platter. Drizzle with lemon juice; sprinkle with chives.
