Steak & Egg Fajitas
- t/2 pound leftover steak, cubed
- t Tablespoons olive oil
- t/2 onion, sliced
- t Tablespoons milk
- t green bell pepper
- t eggs, beaten
- talt and pepper to taste
- t cup grated cheddar cheese
- torn or flour tortillas
- 1.tn a saucepan, heat two tablespoons of oil on high, then reduce the heat to medium and add the steak cubes. Next, add the eggs and milk, stirring rapidly to scramble them.
- 2.tnce the eggs begin to set (less than a minute), cover the saucepan set it aside on a low heat setting or off the heat entirely.
- 3.tn a second saucepan, heat up the other two tablespoons of oil and add the onions and peppers. Reduce heat, salt and pepper to taste, and let them cook until soft.
- 4.terve eggs, steak, and vegetable with hot tortillas and salsa.
