Chicken Tid-Bits Volcano
- 1 1/2 lbs. Boneless Skinless Chicken
- 1/2 cup Balsamic Vinegar
- 1/4 cup Lemon Juice
- 1/4 tbsp Salt
- 1/4 tbsp Pepper
- Filtered Water
- 4-6 servings 15 Minute Rice
- 3-4 Ripe Kiwi
- Peel the kiwi and cut into 1/2 inch squares. Put in a bowl and refrigerate till needed.
- Cut the chicken into 1/2 inch squares.
- Start the rice and while it's cooking/steaming prepare the chicken.
- Place the chicken, vinegar, lemon juice, salt, pepper and 1/2 cup water into a 10-12 inch skillet. Cook over medium low heat. Stir often to keep chicken from burning. Keep covered between stirrings. Add water as necessary to keep a small layer of fluid in the bottom of the skillet. If desired, during the last few minutes of cooking let the fluid cook away to allow slight scorching of the chicken. Reduce heat as necessary to keep from burning.
- Place the cooked rice in a mound in the center of a large presentation platter/shallow bowl. Make an indention in the top of the mound (kind of like a volcano), and place all of the chicken into it. Spread the kiwi chunks around the base of the mound and serve immediately.
