Carrot Cake 2
- 2 c. unsifted flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/4 c. salad oil
- 1 c. dark brown sugar
- 1 c. granulated sugar
- 4 eggs
- 2 tsp. vanilla
- 3 c. peeled, grated carrots
- 1/2 c. chopped nuts
- 1/2 c. raisins
- Preheat oven to 350u0b0.
- Grease a 10-inch tube pan; set aside. In medium bowl, combine flour and next 4 ingredients.
- In large mixing bowl, beat oil and sugars until well mixed.
- Add dry ingredients and continue mixing until well combined.
- Fold in carrots, nuts and raisins.
- Pour in prepared pan.
- Bake for 60 minutes until toothpick comes out clean.
- Cool on wire rack for 10 minutes before removing from pan.
