Banana Bread Batter (Muffins Or Loaf)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup butter, at room temp
- 4-5 very ripe bananas, mashed
- 2 cups flour
- 1 cup nuts
- 1 cup chocolate chips
- 1 Tbls. baking powder
- 1/4 cup milk or half+half, mixed w/ 1 tsp. apple cider vinegar
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1/4 tsp. allspice
- 1/2 tsp. salt
- Preheat oven to 350 F.
- Spay loaf pan or muffin tins w/ non-stick cooking spray.
- Sift together flour, baking powder, salt, and spices.
- Cream together the margarine & sugars. Add bananas, soy milk, and vanilla.
- Add wet ingredients to dry ingredients. Mix well. Add nuts and carob/chocolate chips. Mix.
- Pour batter into loaf pan or muffins tins/cups.
- Bake loaf for 1 hour to 1 hour, 10 minutes.
- Bake muffins for approx. 30 minutes
