Jr'S Texas Caviar
- All cans are 15-16 oz
- 2 cans Black Eye Peas, drained
- 1 can Black Beans, drained
- 1 can corn, drained
- 1 red onion, chopped
- 3 cloves garlic, chopped fine
- 2 jalapeno peppers, chopped
- 1 bell pepper, chopped
- 1/2 bunch cilantro, chopped
- 16oz bottle Zesty Italian salad dressing
- Big bag of corn or tortilla chips
- Optional:
- 2-3 tomatoes, chopped
- 2 avocados, chopped
- 1. Chop everything up.
- 2. Gently mix all veggies in a big bowl.
- 3. Add enough Zesty Italian dressing to get the consistency & wetness you want. (We usually use the whole bottle) Gently mix again.
- 4. Add salt & pepper to taste.
- 5. Refrigerate overnight or at least a couple hours.
- 6. Serve with your favorite chips. We use Tostidos Scoops and Hint of Lime.
