Cinnamon Applesauce Muffins
- 3/4 cup white flour
- 3/4 cup whole wheat flour
- 1 1/2 tsp baking powder (aluminum free)
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 2 tbsp finely ground flax seed mixed with 6 Tbsp water (or 2 eggs)
- 1/2 cup raw sugar
- 5 tbsp melted butter or shortening
- 1 cup chunky applesauce
- 1 chopped apple
- Topping:
- 3 tbsp raw sugar
- 1/4 tsp cinnamon
- Preheat oven to 400 degrees.
- First put the flax seed in a coffee grinder or food processor and grind until fine. Mix with water and let sit about 5 minutes in a medium mixing bowl until thick. This replaces 2 eggs in this recipe. You can use preground flax seed meal, but fresh is so much better for you!
- Mix dry ingredients in bowl and set aside.
- Add sugar and applesauce to melted butter and let sit a minute if using raw sugar to partially dissolve. Add this to the flax seed (or eggs) and mix well. Stir in flour mixture until moist then add chopped apples.
- Fill paper lined muffin pan 3/4 full.
- Sprinkle 1/4 tsp of topping on each muffin.
- Bake 400 degrees 20 min.
- If using stoneware, bake 24 minutes.
