Crazy For Coconut Cake
- 3 3/4 c. sifted flour
- 2 tsp baking powder
- 1 c. soft shortening (part butter or margarine)
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 c sugar
- 1 1/2 tsp coconut extract
- 1 1/2 tsp vanilla extract
- 4 eggs
- 2 c. buttermilk
- Icing
- 4 1/2 c confectioners sugar
- 6 T soft butter
- 3 T milk or cream (or enough to soften)
- 1 1/2 tsp vanilla extract
- 2 egg whites
- Topping
- 8 oz. shredded cocunut
- Sift together flour, baking soda, baking powder, and salt into mixing bowl.
- Cream shortening, add sugar; cream until light and fluffy. Add coconut and vanilla extracts, and blend well.
- Add eggs, one at a time, beating well after each addition. Add dry ingredients to creamed mixture alternately with buttermilk. Beat smooth after each addition. Divide into three pans. Bake 30-35 minutes or until tested done. Cool and frost.
- Frosting
- Beat together the sugar, butter, milk or cream and vanilla extract until smooth. Add the egg whites and beat until light. Frost layers and sides and decorate with coconut, sprinkling over top and sides.
