Ricotta Pancakes With Cinammon Apples
- 2 med apples, sliced
- 1 T butter
- 1/2 cup plus 2 T sugar, divided
- 2 t ground cinnamon
- 1/4 cup cake flour
- 3 t baking powder
- 1/3 t salt
- 1 cup ricotta cheese
- 1 cup 2% milk
- 3 eggs, separated yolks/whites
- 1 t grated lemon peel
- 1 t lemon juice
- Maple syrup
- In a large saucepan, cook apples in the butter over med. heat for 6-8 min or until tender. Sprinkle with 1/2 cup sugar and cinnamon, set aside.
- In a large bowl, combine flour, baking powder, and salt.
- In another bowl, combine cheese, milk, egg yolks, lemon peel, juice, and remaining sugar. Stir into remaining dry ingredients just until combined.
- In a small bowl, beat egg whites till stiff peaks form. Fold into batter.
- Pour batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles form. Cook till the second side is golden brown. Serve with apples and syrup.
