Blueberry Sticky Rice

  1. Cook the rice in the water and coconut water (separate water from cream of canned coconut milk, cooking with a little cream is okay) with 2-4 T of the sugar to bring out the sweetness in the rice. Blend pinenuts with coconut milk, vanilla, and rest of sugar, and ground flax seed. After rice is cooked add in the blended combo. Mix well and then add the berries and let sit so the heat of the rice softens the berries, but still keeps them whole.
