Mom'S Eat Your Veggies Minestrone Soup

  1. Cook ground beef; add onion and cook for approximately 3 minutes, stirring.
  2. Add water, bouillon cubes, salt, pepper and lima beans.
  3. Bring to a boil.
  4. Cover and simmer for about 1 hour (until lima beans are tender).
  5. Then add carrots, turnips, celery, tomatoes, bay leaf and basil.
  6. Simmer until veggies are tender (about 30 minutes).
  7. Add cabbage and cook 5 minutes.
  8. Add spinach and cook 5 more minutes.
  9. Taste; season to taste, if needed. Serve hot.
  10. Great anytime!!
