Oatmeal Cake

  1. Combine and let stand for 20 minutes.:
  2. 1-1/4 cups of boiling water
  3. 1 cup of quick cook oats.
  4. Cream Together:
  5. 1/2 cup of shortening
  6. 1 cup of light brown sugar
  7. 1 cup of granulated sugar
  8. 2 eggs (beaten)
  9. Add oats mixture from top and mix well.
  10. Sift together and add to above mixture:
  11. 1-1/2 cups of sifted flour
  12. 1 tsp. of cinnamon
  13. 1 tsp. of baking soda
  14. 1/2 tsp. of baking powder
  15. 1/2 tsp. of salt
  16. 1 cup of nuts
  17. Bake at 350 degrees for 30-35 minutes in greased and floured baking dish. Put topping on warm dish.
  18. Topping:
  19. 1 stick of butter
  20. 1 cup of brown sugar
  21. 1 tsp. of vanilla
  22. 1/2 cup of evaporated milk
  23. 1 cup of coconut
  24. Put under broiler until light brown and bubbly. (3-4 minutes)
