Oatmeal Cake
- 1 -1/4 cups of boiling water
- 1 cup of quick cook oats
- 1/2 cup of shortening
- 1 cup of lt. brown sugar
- 1 cup of granulated sugar
- 2 eggs (beaten)
- 1-1/2 cups of sifted flour
- 1 tsp.of cinnamon
- 1/2 tsp.of baking powder
- 1 tsp.of baking soda
- 1/2 tsp.of salt
- I cup of nuts
- 1 stick of butter
- 1 cup of brown sugar
- 1 tsp.of vanilla
- 1 cup of coconut
- 1 cup of evaporated milk
- Combine and let stand for 20 minutes.:
- 1-1/4 cups of boiling water
- 1 cup of quick cook oats.
- Cream Together:
- 1/2 cup of shortening
- 1 cup of light brown sugar
- 1 cup of granulated sugar
- 2 eggs (beaten)
- Add oats mixture from top and mix well.
- Sift together and add to above mixture:
- 1-1/2 cups of sifted flour
- 1 tsp. of cinnamon
- 1 tsp. of baking soda
- 1/2 tsp. of baking powder
- 1/2 tsp. of salt
- 1 cup of nuts
- Bake at 350 degrees for 30-35 minutes in greased and floured baking dish. Put topping on warm dish.
- Topping:
- 1 stick of butter
- 1 cup of brown sugar
- 1 tsp. of vanilla
- 1/2 cup of evaporated milk
- 1 cup of coconut
- Put under broiler until light brown and bubbly. (3-4 minutes)
