Fish Tacos
- 1 lb talapia, or other white fish, cut into long thin strips
- 6 small corn tortillas
- 1/2 cup pickled jalapenos
- Sauce
- 1 poblano pepper, split and seeds removed
- 1 jalapeno pepper, split and seeds removed
- 2 Tbs diced onions
- juice of 1 lemon
- 1 cup mayonnaise
- place all ingredients in a food processor and puree
- Fish
- 1 egg
- 1 cup of milk
- salt to taste
- 1 cup harina or corn meal
- 1 cup flour
- 1 cup fine bread crumbs
- 1/2 cup cornstarch
- Place the egg & milk in a bowl and whisk until blended. Set aside. Mix the salt, corn meal, flour, breadcrumbs, & cornstarch in a shallow bowl.
- Dip fish strips into egg mixture, then into flour mixture until completely coated. Fry the fish in hot oil for 3-4 minutes until completely cooked.
- Warm tortillas. Spread sauce on tortillas. Place a few pickled jalapenos in each tortilla, top with several fish strips.
- Serve immediately
