Tandoori Bbq Chicken With Mango Relish
- 4-5 chicken thighs and / drumsticks
- Tandoori Marinade:
- 1tsp ground turmeric
- 2tsp garam masala
- 1tsp ground coriander
- 1tsp ground cumin
- 1clove garlic, chopped
- 3cm knob fresh ginger, peeled and chopped
- juice of 1/2 lemon
- 100ml natural yoghurt
- small handful chopped coriander stalks
- sea salt and black pepper
- Mango relish:
- 1 firm but ripe mango
- 1 large red onion, finely chopped
- 1 red chilli, deseeded and chopped
- Juice of 1/2 lime
- Marinade:
- Mix all of the ingredients in a shallow bowl, add the chicken and turn the pieces over so they are all covered. Cover with cling film and refridgerate for a few hours or overnight.
- Relish:
- Peel the mango and chop the flesh, discard stone. Mix with the chopped onion and chilli, and lime juice.
- Cook the chicken over a medium heat BBQ, turning frequently until cooked. Use any remaining marinade to baste the chicken while cooking. Once cooked serve with the relish. Enjoy!
