Tiramisu

  1. Add Cream of Tartar to egg whites and mix on high until stiff
  2. In a separate bowl, combine Egg yolks, Vanilla, Sugar, Espresso, Kahlua, and mix vigorously until blended. Remove 1/3 of mixture and set aside for soaking Lady Fingers.
  3. Add marscapone to larger portion of liquid, and mix until combined. Fold in egg whites.
  4. In a large basting pan, put a light layer of the Marscapone mix coating on the bottom.
  5. Quickly dip each individual Lady Finger in the remaining liquid and place in the pan in a single, uniformed layer.
  6. Place a layer of Marscapone mix( about half) on top of the Lady Fingers.
  7. Place another layer of Dipped Lady Fingers top of the Cream.
  8. Spread the remaining Marscapone Mix and smooth out.
  9. With a small sifter, sift the Cocoa on top followed with Chocolate Shavings.
