Tiramisu
- 9 Eggs-Separated
- 1/4 cup Pure Vanilla
- 1.5 cups Sugar
- 48 ounces Marscapone
- 2 cups Brewed Espresso-Cold
- 1.5 cups Kahlua
- 60 pieces Lady Fingers
- 2 ounces Sweetened Cocoa
- 4 ounces Chocolate Shavings
- 1 dash Cream of Tartar
- Add Cream of Tartar to egg whites and mix on high until stiff
- In a separate bowl, combine Egg yolks, Vanilla, Sugar, Espresso, Kahlua, and mix vigorously until blended. Remove 1/3 of mixture and set aside for soaking Lady Fingers.
- Add marscapone to larger portion of liquid, and mix until combined. Fold in egg whites.
- In a large basting pan, put a light layer of the Marscapone mix coating on the bottom.
- Quickly dip each individual Lady Finger in the remaining liquid and place in the pan in a single, uniformed layer.
- Place a layer of Marscapone mix( about half) on top of the Lady Fingers.
- Place another layer of Dipped Lady Fingers top of the Cream.
- Spread the remaining Marscapone Mix and smooth out.
- With a small sifter, sift the Cocoa on top followed with Chocolate Shavings.
