Mandarin Orange Cake
- 2 eggs
- 3 - 11oz mandarin oranges (well drained save liquid)
- 2 cups flour
- 2 cups sugar
- 1/2 tsp salt
- 2 tsp baking power
- 3/4 cup packed brown sugar
- 3 tbsp reserved mandarin juice (or milk)
- 2 tbsp butter
- In a medium bowl beat together the eggs, 2 cans mandarin oranges and Vanilla. set aside.
- Sift together flour, sugar, salt and baking powder.
- Add the flour mix to the egg mix a little at a time.
- Pour into a 9x13 floured pan and bake 30 to 35 minutes at 350F.
- While the cake is in the oven combine the brown sugar, reserved mandarin juice and butter in a small sauce pan. Bring to a boil.
- When the cake is out of the oven poke holes all over the cake, then pour the brown sugar mix all over the cake.
- Let the cake "cure" in the fridge for 1 day.
- To serve leave in pan and cover with wipped topping and decorate with 1 can (this is the 3rd can) of mandarin oranges.
