Spicy Potato, Tomato, And Pepper Tagine
- sauce:
- 6 garlic cloves
- salt
- 1/2 teaspoons paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne
- 3/4 cup chopped parsley
- 1/2 cup chopped cilantro
- lemon juice (~1 lemon's worth)
- 3 tablespoons apple cider vinegar
- 3 tablespoons olive oil
- vegetables:
- 1.5 pounds potatoes (fingerling, Yellow Finn, or red), scrubbed & cut into chunks
- 6 stalks of celery cut into 2-inch pieces
- 3 large bell peppers (mix of colors), cut into bite-sized pieces
- 4 ripe red or yellow tomatoes, cut into bite-sized pieces
- salt

- Sauce:
- In a mortar (or a small bowl) smash the garlic with salt, paprika, cumin, and cayenne into a smooth paste. Add the herbs and pound them into the paste (they don't have to completely break down). Stir in lemon juice, vinegar, and oil.
- Vegetables:
- Preheat the oven to 375. Oil a large fairly deep baking dish.
- Paraboil potatoes unitl just tender (~10 minutes) & drain. Mix potatoes, peppers, celery, and tomatoes together and season with salt & pepper.
- Combine the sauce and the vegetables, then pour the mix into the baking dish. Drizzle oil over the top, cover with aluminum foil, and bake for 35 minutes. Remove the foil and bake for another 15 minutes (or vegetables completely tender).
