Fried Cheese Balls
- 4 Tbsp. margarine
- 1/2 c. flour
- 1 c. milk
- 1 c. grated cheese
- Worcestershire sauce (optional)
- Tabasco sauce (optional)
- cayenne pepper to taste
- cracker crumbs (fine)
- 1 egg, beaten
- hot oil for frying
- Make a thick cream sauce by melting the margarine and adding flour and milk.
- Cook until thick and smooth.
- (You need 1/2 cup sauce.)
- Season to taste with salt and pepper, including cayenne. New York State cheese is best but you can use a milder cheese highly seasoned with Worcestershire sauce and Tabasco sauce, etc. Mix in grated cheese and chill mixture thoroughly.
- Then shape into small balls.
- Roll in fine cracker crumbs.
- Dip into beaten egg, then in the crumbs again.
- Fry in hot oil in a deep pan quickly until brown.
- (Brown quickly or they will split open.) Keep warm in a 150u0b0 oven or until enough are ready to serve.
