Milano Pasta Fagioli
- ditilini pasta- 1lb.
- block of frozen spinach- cooked
- 5-6 cloves of fresh garlic sliced
- 4 cans cannelini beans
- 4 cans chicken broth
- 1 can of tomato sauce or one ladel full of left over marinara sauce
- basil leaves
- 3T cannola or olive oil
- grated parmesan or romano cheese
- Boil and drain pasta- set aside
- boil and drain spinach- set aside
- In large saucepan or soup pot sautee garlic in oil approx. 2 min. Do not brown.
- Drain Cannelini beans and add to garlic and stir
- Add tomato sauce or marinara and stir
- Add chicken broth and bring to a boil. Add cooked spinach and stir. Cover surface of mixture with basil leaves(approx. 2T) and stir
- Remove from heat- Add cooked pasta. Cover and let sit for at least 5 minutes.
- Serve in soup bowl sprinkle grated cheese to taste. Total prep time about 20 minutes.
