Chicken With Honey Beer Sauce

  1. heat large skillet over med. high heat , add oil to pan and swirl
  2. sprinkle chicken with salt and pepper
  3. add chicken to pan and saute for about 4 mins per side
  4. remove chicken and keep warm
  5. add a little oil to pan and saute shallots for 1 min or until translucent
  6. combine beer, soy sauce, mustard and honey ( QUADRUPLE THE SAUCE)-- WHISK IT
  7. add beer mixture to pan, bring to a boil, scrape pan to loosen brown bits, cook a few mins until liquid is reduced
  8. return chicken to pan, turn to coat with sauce
  9. sprinkle with parsley
