Chicken With Honey Beer Sauce
- 2 teasp. canola oil
- 1.5 pounds chix breast pounded thin
- salt and pepper
- 3 Tablespoons thinly sliced shallots
- 2 Tablesp. flat leaf parsley
- SAUCE:
- 1/2 cup beer... used old dog ale (really good!)
- 2 Tablesp. soy sauce
- 1 Tablesp. whole-grain dijon mustard
- 1 Tablesp. honey
- heat large skillet over med. high heat , add oil to pan and swirl
- sprinkle chicken with salt and pepper
- add chicken to pan and saute for about 4 mins per side
- remove chicken and keep warm
- add a little oil to pan and saute shallots for 1 min or until translucent
- combine beer, soy sauce, mustard and honey ( QUADRUPLE THE SAUCE)-- WHISK IT
- add beer mixture to pan, bring to a boil, scrape pan to loosen brown bits, cook a few mins until liquid is reduced
- return chicken to pan, turn to coat with sauce
- sprinkle with parsley
