Best Ever Carrot Cake
- Cake:
- 2 cups sugar
- 4 eggs
- 1 cup vegetable oil
- 2 cups flour
- 2 tsp. baking powder
- 2 tsp.baking soda
- 1 1/2 tbl.cinnamon
- 4 cups grated carrots
- 3/4 cup chopped pecans/walnuts
- cream cheese frosting:
- 8 oz. cream cheese(softened)
- 1/2 cup butter
- 1 tsp. vanilla
- 1 lb. powered sugar
- Cake:
- Preheat oven to 350 degrees.
- Grease & flour 13x9x2" pan
- Beat sugar & eggs until thick &
- pale yellow. Stir in oil.
- Sift together flour, baking powder, baking soda & cinnamon.
- Stir into egg mixture.
- Fold in carrots & nuts.
- Pour batter into pan & bake in preheated oven, 35 to 40 min.
- Cool on rack & frost with cream
- cheese frosting.
- Frosting:
- Beat cream cheese, butter,
- vanilla & powdered sugar until
- smooth.
