Caesar Salad
- 1 1/2 lb. romaine lettuce
- 24 plain croutons
- 2 garlic cloves
- 6 Tbsp. olive oil
- 1 Tbsp. wine vinegar
- 1/2 tsp. lemon juice
- 1 egg yolk
- 4 Tbsp. Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1 tsp. dry mustard
- 1 tsp. coarse black pepper
- 1 tsp. salt
- 4 anchovy fillets, cut into small pieces
- Place garlic cloves through garlic press and put into olive oil in wooden bowl.
- Add anchovies and press all of these with fork.
- Add vinegar, lemon juice, Worcestershire sauce, mustard, salt and pepper and egg yolk.
- Mix well.
- Add lettuce leaves and mix well.
- Add croutons and Parmesan cheese and mix well.
- Serves 4 to 6.
