Tamale Pie
- 1 pound lean ground beef or turkey
- 1 large yellow onion , diced (about 1 1/4 cup)
- 1 cup diced green or red bell_pepper ( I preffer red)
- 1 8 oz can tomato_sauce
- 1 8 oz can diced tomato's, undrained
- 1 small can diced green chili's (optional)
- 1 1/2 cups frozen corn kernels
- 1/2 cup sliced black_olives
- 1 Tbsp granulated_sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tsp chili_powder
- 1 tsp onion_powder
- 1 tsp garlic_powder
- 5 Tbsp s olive_oil
- Topping
- 11/2 cups shredded cheddar_cheese
- 3/4 cup yellow cornmeal
- 1/2 tsp salt
- 2 cups cold water
- 1 Tbsp butter
- Step: 1
- In a large heavy skillet, heat the olive oil. Add onion and bell pepper and cook until the onion is translucent. Add the ground beef or turkey and cook until no longer pink. Add the tomato sauce and canned tomatoes with the juice, and the seasonings, sugar and chili powder. Simmer 25 to 30 minutes until mixture is thickened.

- While meat mixture is simmering, make the cornmeal topping.In a medium sized saucepan combine water, cornmeal and salt. Place over medium high heat and cook, stirring often until mixture is thickened. Add butter and stir well.
- Step: 3tdd the olives ,corn and canned chili's if using and mix well.Pour mixture into a greased 9x9x2 inch baking dish. Top with cornmeal topping and bake at 375F for 40 minutes. Add the cheese the last 10 minutes of baking.
