Fluffy Pancakes
- DRY INGREDIENTS small mixing bowl, big whisk, stirring spoon
- 2 cups all-purpose flour
- 2 tbsp white sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- WET INGREDIENTS big mixing bowl, big whisk*, ladel
- 2 cups buttermilk (or 2 cups milk + 1 tbsp lemon juice)
- 3 tbsp melted margarine/butter
- 1 egg
- COOKING griddle @ high, pancake flipper
- 1-2 tsp vegetable oil
- PREP FOR COOKING
- 1. Preheat griddle @ High
- 2. Mix the DRY INGREDIENTS in the big mixing bowl using the big whisk
- 3. Mix the WET INGREDIENTS in a small mixing bowl using the big whisk*
- 4. Pour the WET INGREDIENTS into the DRY INGREDIENTS in the big mixing bowl and mix using the stirring spoon to create batter. Batter should be moderately lumpy and evenly moist.
- COOKING
- 5. Put some oil on hot griddle.
- 6. Dollop out the batter on the griddle using the ladel to create pancakes.
- 7. Side one: cook 1.5 - 2 mins
- 8. Flip with pancake flipper.
- 9. Side two: cook 1 - 1.5 mins
- 10. Remove with pancake flipper and serve.
