Ground Lamb On Hummus
- 1/2 lb ground lamb
- 1 medium/1/2 lg. onion, chopped
- 1 package of hummus
- pine nuts
- parsley
- 3 T o'oil
- 1t ground cinnamon
- paprika
- lemon wedges
- pita/flat bread
- Salt/Pepper
- -Heat o'oil in pan and fry onions until they are golden, ~20 min, set aside with the oil
- -Make or get the hummus on a plate
- For some reason this recipe wants you to let the onions cool and kind of start over with them. I wonder if it would be ok to just add the ground lamb? Maybe toast pine nuts during this time.
- -Reheat onions, add ground lamb/onions, add 1 t of cinnamon, when almost done, add salt and pepper. Saute until the ground lamb is a bit crispy, take off fire, add paprika.
- -Pour onion/lamb mix over hummus, sprinkle generously with parsley, add pine nuts.
- -Serve w/ toasted pita and lemon wedges
