Easy Roast Beef Burrito

  1. Saute onion and green pepper in olive oil in pan until soft. Add can of roast beef with gravy and all spices. Roast beef is already cooked from the can, so you merely need to warm it with the pepper and onion that you've just cooked and add seasoning. Start breaking up the roast beef chunks into slivers and mix uniformly into gravy. Once mixture is uniform, add the tablespoon of corn starch. Let mixture thicken as you stir over heat. Once mixture is thick enough to form a filling for a burrito (rather than a "Mexican gravy"), remove from heat. Add some of mixture to center of a tortilla so that mixture is longer than it is wide. Top with cheese, then fold tortilla at either "end" of the line of filling over filling. Fold remaining sides over the first two sides that you folded. Flip burrito over on plate so that fold is down. (If you need to heat this in a microwave, add rice and/or beans (sides) to be heated to plate and warm in microwave. This is a good step if you want to melt some cheese on top of refried beans from a can while heating burrito and rice.) When burrito and sides are hot (either from microwave or pan), top burrito with sour cream and sprinkle some chopped black olive on top.
